Carillon Historical Park welcomes you to the nation's first production brewery housed in a museum. Carillon Brewing Co is a place where the 1850s in Dayton comes alive. Historical recipes, ingredients, and techniques are used right before you to reproduce the ales that Daytonians once enjoyed. Each drink is a story about how beer has changed over time. Our hearty fare continues this dedication to history by sharing dishes by the early immigrant brewers. (Food served 11:00am-9:00pm daily.)

I've been here many times and loved it, so went to visit for my birthday around 8:10pm. The hostess was about to seat us when another person interrupted her and informed us they were no longer seating anyone because the kitchen closed at 9pm (posted hours are till 10pm). She was extremely unapologetic and just awkwardly stared at us until we left. Unbelievable.

Went there for the first time on Saturday, it wasn't overly crowded but they said we had to wait thirty minutes before we could be seated and you can only make reservations if it's 8 or more people. We finally sat down, ordered our food and it took about 45 minutes to get to our table, very slow. The food was good, I had the metwurst and bratwurst with potato salad. My friend ordered a dessert but the server came back and said they ran out of it, Rasberry cheesecake. Not impressed for the first time, and not sure if I'll go back.

The beers bears were excellent the Schnitzel was wonderful my father said and the bratwurst didn't last long. Sat at the bar had a wonderful bartender that really took care of us would come back again. Also a unique setting of an 1850s pub, it's a must.

Cozy restaurant in an historic, working brewery. They've expanded their menu somewhat from when they first opened, adding more vegetarian options (yea!!). My husband had the fish and Cole slaw with German potato salad and a ginger pale ale and I had the arugula salad with beets, walnuts, and fried goat cheese with vinegar and oil dressing and iced tea. DELICIOUS!!

This place is amazing! Retro brewery with atmosphere, props and all that take you back to the 1850s. Amazing selection of German foods. Pretzel appetizer was perfect. I really enjoyed the beers as well. I'm a big sour guy, so that was stood out as king. Spacious room to eat and look around. Friendly staff. This was one of the best places we found when visiting Dayton. Highly recommend.

$14.00 for a $5.00 Texas tenderloin at any County Fair calling it Schnitzel and without the gravy. German I think not.Service I ordered a flight of beer it came unmarked and she guessed which is what. The brew master was aware this issue I guess it’s a common problem.She didn’t refill our drinks until we were ready to leave. We came on a Saturday night seemed slow now I know why. We had 12 people in our party there menu states it will add 18 percent gratuity when our bill came they added 20 percent.They didn’t earn 10 percent. I’m a good tipper ask any of my servers or barbers.The beer was very good. That’s the only reason I would try it again

Cute little brewery styled after the late 1800s time period with traditional brewing techniques and style. Some really good simple beers. Lunch was also enjoyable. Go for the history, stay for the drinks. Quite a beautiful building. If you're in the Dayton area, be sure to check it out.

Very neat and convenient place. They provide large meals and for economical prices. I liked the menu very much and the waiters were super amiable and chatty. Will definitely recommend this restaurant.

My wife and I were seated. After 20 minutes of not being acknowledged by the wait staff, we left. We gave the hostess a chance to rectify the situation on our way out, nothing. It looks neat on the inside. The food smells good. Drove from Greenville to eat here.

Outstanding place! Super friendly staff. Great beer. Great food. Try their Ginger Pale Ale, its tastes DANK! Yes, like you might imagine from that descriptor. All their beers are great. One of the brewers Dan was very friendly, showed me around, explained their period 1850's process. They fire roast their own specialty malts and have some beers with odd veggies that turn out great. The Beet beer and Ginger are crazy good. Very very cool. You wont be disappointed!

Very cool historical brewery. Beers brewed like that did in the 1850s. Enjoying the Berliner Weisse now. Very tasty German influenced food. Reuben is awesome as is the potato salad. Friendly staff.

Very cool place to visit. Get to see old school beer brewing with heat provided by a wood fire. The food was excellent too. Special thanks to nice older gentleman (sorry didn't catch ur name) who shared so much info on the beer, breads and some extra samples. Take a step back in time and visit. U won't want to miss it

Had an incredible experience at Carillon! As a lover of breweries and history, it was refreshing to have those 2 worlds collide. This operational museum exhibit uses brewing techniques from the 1800s to create fantastic beers which, oh yea, are based on 1800s recipes as well. Complete with a full menu of delicious German fare, Carillon is a must for history buffs and brewery lovers alike.

This review is for the restaurant. Very cool venue. We liked the historical dress and the menu that was inspired from history.They serve their own ale. Which was pretty good, interesting flavors. They only make ale because 140 years ago that is what technology allowed.While the service was good. The speed of such service was not.Also the food was average.But I got a 10% discount for being a member of Carillon Historical Park. So that's nice.

Amazing. You'll never find another brewery just like this one. It's truly a gem and asset for Dayton. I wish other breweries would find unique ways to stand out like Carillon did. Their food is also really good and prices are reasonable.

Cool place. Newer construction using older construction techniques make the building look like it is ages old, and the crew here uses old beer brewing techniques and tools. Fun to watch.I had a porter that was very good, but was here for a wedding so the only food we tried was a buffet that was put out. It was fairly good, but nothing exciting. I don't like to judge restaurant food based on buffets that they provide for large parties. Overall we had a lot of fun here and it was great service and a nice atmosphere.

Questions & Answers

Yes. I have been there with a group of 20-25. Food in buffet setup was good. Great setup for birthday or any other group.

The food is not that good and beer at Warped Wing is far better.

This is not the restaurant.

Carillon Brewing Co. Is happy to take reservations. The only exception is during A Carillon Christmas. We do not take reservations after 4:00 p.m. on any day when that event is taking place.
